Ok, this one is a lot more complicated, and takes more time and has a few odd items needed than my usual items. But it’s always fun to learn about treats from around the world so here goes! This one is a Turkish recipe. The end result should be a crispy sweet pumpkin treat.
You will need!
Ingredients
Pickling Lime Water:
- 1 gallon water
- 1/2 cup pickling lime
Pumpkin:
- 4 cups white sugar
- 3 pounds pumpkin, peeled and sliced into small around 2 inch pieces. You want a good firm pumpkin for this.
- 1 cup water
- 1 squeeze lemon juice, fresh
Equipment needed
- Measuring cups
- Stock pot
- Slotted spoon
- Large pot
- Sieve
Instructions
Pickling Lime Water:
- In a large stock pot, combine pickling lime and water and stir until dissolved. Place pumpkin slices into water and let sit 12-24 hours, stirring occasionally.
- Using a slotted spoon, scoop the pumpkin into a sieve and then Rinse slices thoroughly 3 separate times until slices are completely cleared of the lime.
- Dump out and clean the pot and then return the pumpkin to it. Fill with fresh cold water and let soak for 3 more hours.
Pumpkin:
- Drain the pot and clean it or use a new pot. Place pumpkin into it and Add sugar and water. Cook on medium-low heat for about one hour, or until the pumpkin turns a golden-brown colour. DO NOT BOIL. Add a squeeze of lemon and cook a bit more. Let it cool.
