Butterfly Pea Flowers and powder can be found in the herbal tea sections of a lot of tea places. And its SO COOL as if you steep it alone it makes a pretty blue colour but then say, add it to lemonade it turns purple! Or even pink if you add enough . And that’s done with NO magic at all! SO here is a neat candy you can make with it . You can change up how it works by adding a bit of lemon when you divide it.
Kohakutou Candy is a sweet from Japan that is a gummy candy with a crunchy hard outside that looks really pretty. It is most often made into crystal point shapes but you can use any kind of sweet mold with it. For this recipe you want ones that are large enough to layer the mixture.
You will need!
Ingredients
- Butterfly Pea Flowers Water:
- 4 tsp dried Butterfly Pea Flowers
- 1 1/2 cups boiling water
- For the Candy:
- 120g Butterfly Pea Flowers water
- 1/4 tsp Blue Butterfly Pea Powder
- 4g agar agar powder
- 120g sugar of choice
- 2 tsp lemon juice
- 1/4 tsp candy flavoring of your choice
- Edible gold or silver stars and moons or edible flakes of cold and silver – optional
Equipment needed
- Measuring cups
- Measuring spoons
- Bowls
- Sauce pan
- Crystal or gemstone shaped candy mold
Instructions
1.. Place the Butterfly Pea Flowers in a measuring cup and add boiling water. Let sit for 10 mins. Use a spoon to press the flowers against the bottom of the cup so they release more color. Discard the flowers once the color is to your liking.
2. Add 120g butterfly pea flower water in a saucepan, add agar agar powder and stir well. Bring the mixture to a boil, stirring constantly. Add the sugar and cook on low for another 3 minutes. Turn off the heat and then add flavoring of your choice. You CAN leave it out but it honestly will taste better with it.
3. Divide mixture into 3 portions.
Add the lemon into one portion and mix if you want it lighter and more pink in color add more lemon.
To make a darker blue add the powder to one and stir.
Leave one bowl unchanged from your starting shade.
If you are adding the gold and silver stuff do so at this time as well
Pour the first un changed portion of the mixture into a mold and let it set just a bit, then repeat with the other two colors. Swirl each one with a toothpick.
4. Place the mold in the fridge for 3 hours to set.
5. Remove the set candy from the mold and enjoy eating your gemstones!
Note: you CAN do this without the fancy mold but then you have to hand cut all the lil gemstone candies from a big hunk of the candy just made in a flat candy mold and that’s just messy and takes time and never looks QUITE right. Plus wastes the bits you cut off.
